Kimchi – Korea’s National Dish

Kimchi is the iconic national food of South Korea, known for its bold flavor, rich history, and health benefits. It is a traditional side dish made by fermenting vegetables—most commonly napa cabbage and Korean radish—with seasonings like chili pepper flakes (gochugaru), garlic, ginger, salt, and fish sauce.

There are over 100 varieties of kimchi, each with its own regional twist and ingredients. Some are spicy, while others are mild or even slightly sweet. Kimchi is eaten with nearly every Korean meal and is used in many dishes like kimchi jjigae (stew), kimchi fried rice, and kimchi pancakes.

Kimchi is more than just food—it's a deep part of Korean identity and culture. Families often make large batches together in a tradition called "kimjang", which has even been recognized by UNESCO as an Intangible Cultural Heritage of Humanity.

Not only is kimchi flavorful, but it's also highly nutritious. It's rich in vitamins, fiber, and probiotics, making it both a tasty and healthy part of the Korean diet.
